    O
     
    Oak: Important factor in the elaboration of fine and complex wines. Oak barrels retain sharpnesses and confers positive smells and tastes when they are moderated when they are undesirable its aggressive presence covers the wine.
    Old: With excessive maturity, without freshness.
    Opaque: to the view without shine. Lacking of interest in nose and in mouth.
    Open: It means that the colour is very clear and less intense.
    Oxidized: Muted taste and unpleasant in a wine by several reasons with excessive contact with the air.
    Overripe: ill, in bad conditions. It could happen to wines with an excess of aging period.
