    Maderized/Overoaked (oaky): Oxidized wine which reminds to wood. Dense smell, dull staste and dark colour in white wine. Positive characteristics.
    Malic (Malic acid): Fresh smell to harsh apples which we could find in certain young wines. It is typical of some varieties of white grapes.
    Malolactic fermentation: Process in which the malic acid is converted into latic, smoothing the wine .
    Masculine/ Virile: Wine with body, incisive, until being aggressive.
    Mature: Wine in its full ripeness, before starting its decadency. Rich wines in colour are obtained with ripe grapes, sweetness and natural richness.
    Meagre/Lean: Wine poor in alcohol and dry extract.
    Mellow: Soft, pleasant without edges or harshnesses.
    Metallic: Faulty wine by undesirable contact with elements of metal.
    Millésime: French Word to distinguish an elaborated wine in a year of exceptional harvest which was declared. It is mainly used in the Champagnes.
    Mouldy: Undesirable taste due to faults of the grapes or to the bad storage.
