    Red wines
    They are mainly elaborated with the Canary varieties: listán, negramoll, tintilla and castellana. The wine harvest is done since the end of August to the end of October (depending on the heights above sea level). The principal elaboration´ methods are:
     
    Traditional Red Wine:
    For its elaboration, the red grapes are destemmed and crushed to facilitate a better release of the grape juice. The time of barreling could vary around 5 days to a temperature of 28ºC. Later, it will be pressed. The graduation is between 12% - 13´5% vol. The colour is red cherry with violet shades, good layer, bright and vivid, being the herbaceous and fruity smell, rich in shades that evoke to red fruits. In mouth is dry, with a good structure, balanced in its components and slightly tannic, the finish is very kind and persistent.
