    WHITE WINE

The steps to convert the grape into white wine are the followings:

    1. Pressing, is the act of applying pressure in order to separate juice or wine from grapes.
    2. It is denominated debourbage or racking must and it tries to clean the must in order it becomes fresher and lighter. This process has to be made before the fermentation process started.
    3. It is to put the wine in tanks or barrels of wood, this process is known as vatted. Later, the fermentation process is made, under low temperatures in order to bend sugar in alcohol. If we want to obtain a dry white wine, the fermentation is made in a spontaneous way, other cases: it is necessary to stop it by several methods as the heating or cooling.
    4. Racking, just finished the fermentation, it consists in separating the wine from other solid components.
    5. The decanting, this process decants the wine from one storage to another one decanting it.
