    • Honeys from medium heights
    These honeys are produced in the apiaries located between 600 and 1,000 meters of altitude. The crystallisation of these honeys is very slow. The mountain poly-floral honeys and the monofloral chestnut tree, moor or bugloss honeys stand out.
     
    • Honeys from the summits
    These honeys are produced above 1,000 meters of altitude. The crystallisation of these honeys could neither be called slow nor quick; it is just in between. This classification was created because the flora the bees feed themselves of is not always the same.
     
    • Monofloral honeys
    These are the honeys that come from just one plant or a very small number of plants.
