    Production process
    The extraction of honey is carried out when the honeycombs are capped, that is to say, when the honey is “ripe”. This process is named “uncapping”, and consists in cutting the lids of the cells (also named “caps”) with a special knife so that the honey comes out on its own or with the help of a special brush used to open the caps. The honeycombs are placed in receptacles where the honey will be extracted by means of a centrifugation process so that the honeycombs are clean for the bees to use them again.
     
    Once in the factory, the honey is analysed and its purity is checked and it is approval for consumption. Later on, the honey is filtered so as to remove all impurities and then put into jars.
