- Diastase (UG):<=9 (except for honeys with a low natural content of enzymes, for which the level can be of >=5 if the HMF content is < 15mg/kg).

HONEY-TASTING PREMISES:
|
|
- They have to have natural light, preferably facing North, or if this is not possible, good and abundant fluorescent light.
- The walls must be light-coloured, preferably white, to improve the work light.
- The work table must have a light-coloured top, although it can always be covered with a restaurant-like disposable white paper table cloth.
- The work area must be totally free of internal parasite smells: kitchens, cafeteria, laboratory, etc.
